Kim serves up dishes made with vegetables from the brassicaceae family: braised red cabbage with onion and tart apples, nutty Brussels sprouts with honey Dijon vinaigrette, Colcannon (an Irish dish made with potatoes and cabbage), and pork chops with apples, sweet potatoes and sauerkraut. On the road, we travel to a biodynamic farm and dairy in Harlemville, N.Y. to see how they make sauerkraut.
